Green shatta - a punchy Palestinian hot sauce made from green chillies and herbs. Biber salcasi - the Turkish pepper paste that adds a low, sweet heat to almost anything. Date molasses - thick, dark, less sweet than you'd expect, brilliant with savoury as much as sweet. And four spices: za'atar, baharat, chaat masala (the Indian spice blend with tamarind and dried mango that makes you wonder where it's been all your life), and black lime powder - dried limes ground to dust, tart and a little smoky.
